Chicken in lemon and Orange Marmalade Sauce

 Fried Chicken is always a favorite fare in the gathering of family and friends . Even for lunch or dinner, fried chicken is well loved by adults and children. This time around, I made use of the "long-been-in-the-ref-Orange-Marmalade". It's a wise idea to consume the toast partner for breakfast in creating a sweet and tangy sauce for the all-time favorite fried chicken.

Ingredients:
Deep Fried Chicken
1 whole Chicken (cut into small portions)
3 pcs Calamansi or 1 pc Lemon (squeezed for marinade)
3 T. Fish Sauce (available in Filipino and Asian Stores) or 1 tsp. Sea Salt
 dash of finely ground black pepper
Canola oil (for deep frying)

Procedure:
1. Clean and pat dry the whole chicken and cut into small portions.Set aside.
2. Marinate in Calamansi or Lemon Squeeze, fish sauce or salt and add a dash of pepper. Leave for an hour for the chicken to absorb the marinade.
3. Deep fry in oil till golden brown. Prick the chicken pieces once frying to ensure that the insides are already cooked.
4. drain in paper towels. Set aside.

Lemon and Orange Marmalade Sauce
1 whole Lemon (squeezed and sliced thinly)
6 T. Orange Marmalade
1 T. butter
1 T. olive oil
1 cup water
brown sugar to taste
sesame seeds and chopped onion leaves (for garnishing)

Procedure:
1. Heat oil then butter in a saucepan.
2. Squeeze the lemon and include Lemon slices in the oil and butter mixture
3. Add sugar while stirring (amount of sugar depends upon your level of sweetness)
4. Pour orange marmalade in the mixture.
5. Pour enough water and stir in low heat till the mixture reached a saucy and not so thick consistency.

Serving Procedure:
1. Arrange the fried chicken pieces in a serving plate.
2. Pour sauce over the fried chicken pieces.
3. Add a dash of sesame seeds and chopped spring onions as garnishing.
